Spinach Quinoa Flour Crepes Recipe

Ingredients

For the batter:

  • Spinach quinoa flour- 1 cup
  • Mixed garlic herbs- ½ tsp
  • Salt and pepper- As per taste
  • Water- 2 cups

For the filling:

  • Olive oil- 1 tbsp
  • Finely chopped onion- 1 whole
  • Sliced Mushroom- 200 gms
  • Cubed Cottage Cheese or Paneer- 100 gms
  • Crushed Garlic- 2 to 3 cloves
  • Spinach- 1 bowl
  • Milk- ¼ cup
  • Salt and pepper- As per taste

Method

  1. Mix all the ingredients required to make the batter in a bowl to pour some water to have a batter-like consistency.
  2. Heat oil in a pan to add the onion and the garlic into it. Let this saute for a minute and then add the spinach and the mushrooms.
  3. Once they wilt, it’s time to add the cottage cheese and milk with some salt and pepper for proper seasoning.
  4. Now to make the crepe, heat a non-stick frying pan over medium heat and grease with a little oil. Then, pour a ladleful of the batter into the middle of the pan and spread the batter out to the edges. Flip the crepes once they look done after cooking both sides.
  5. Now spread pesto sauce according to your taste preference on the cooked crepes and layer it with the filling. To add more fun, sprinkle some parmesan and enjoy the crepes while they are still warm.
